Job Summary

Do you enjoy crafting and implementing innovative culinary solutions to customers We are currently seeking an Executive Chef III at the University of Wisconsin Green Bay. You will be a lead culinarian within our dining programs. As a key leader in our dining programs youll spearhead menu development and preparation infusing creativity and precision into every dish. This role entails supervising budgeting and food costing ensuring client and customer satisfaction and fostering employee training and growth. Green Bay offers lots of outdoor activities including biking hiking and boating along the Bay. The nearby Green Bay Packers Hall of Fame Lambeau Field and Parks provide plenty of recreation and sports events. While Green Bay offers the necessary shopping dining and entertainment options it is still a small city so you wont find the extensive options available in larger cities. However there are plenty of places to grab a bite from local restaurants to national chains. There are seasonal events such as Artstreet (an annual arts festival) local farmers markets and music festivals. UWGB has a strong emphasis on environmental sustainability and this spills over into the local food scene. Youll find several farmtotable restaurants that focus on locally sourced seasonal ingredients. For instance The Woods offers fresh locally sourced meals and a great ambiance thats perfect for foodies looking to explore new dishes. The Green Bay Farmers Market is a gem for anyone into local fresh ingredients. Its open yearround and features a wide variety of produce artisanal goods meats and baked goods. Its a great place to shop for fresh ingredients to prepare your own meals or to support local vendors.

Key Responsibilities

  • Plan regular and modified menus according to established guidelines follow standardized recipes portioning and presentation standards.
  • Complete and apply daily production worksheets and waste log sheets.
  • Supervise and train chefs cooks and other team members on food preparation/ presentation safe food handling operation of equipment food safety and sanitation.
  • Ensure the implementation of culinary standards including recipe compliance and food quality.
  • Manage inventory of food and nonfood supplies maintaining compliance with established guidelines while ensuring necessary products are available when needed.
  • Follow federal state and local health and sanitation regulations and department procedures as evidenced through audits conducted by local health departments and thirdparty entities.
  • Aid in the forecasting of food and labor costs and monitor actual financial results.
  • Foster strong client relationships to align our programs with their objectives driving satisfaction and retention.
  • Perform other duties as assigned to support the efficient functioning of dining service operations.

Preferred Qualifications

  • A.S. degree or equivalent experience.
  • Three or more years of progressive culinary or kitchen management experience depending on formal degree or training.
  • Experience in highvolume handson foodservice operations.
  • Must be experienced with computers.
  • ServSafe Certified .
