What we are looking for
Strong leadership and a passionate and driven leader who can focus on both the individual and the team.
Experience with improving the financial viability and sustainability of a kitchen or restaurant to help grow revenue and improve business efficiencies.
Someone who is committed to understanding and further developing relationships with producers & suppliers in the local region.
High level understanding of COGs P&L Control Wage Costings OH&S Practices/Compliance and Capital Budgets
Solid understanding of staff management practices including recruiting rewarding training appraising counselling and staff development
Extensive experience within a similar sized operation including A La Carte C&E Weddings Fine Dining & Casual Dining
The desire to be innovative and create food with elegance and flair.
Confidence in leading breakfast lunch dinner or special event kitchen teams
Ensuring customer expectations are met and product quality is matched even when you are not in the kitchen.
Ability to follow procedures and processes
Menu development. Using modern and classical techniques
Ability to produce high quality food from multi national cuisines
Strong understanding of banquet and conference operations
SKILLS & EXPERIENCE:
Trade qualification or equivalent (Cert III in Commercial Cookery)
Dedication to the production preparation and presentation of dishes of the highest quality.
Ability to take direction and work with minimal supervision.
Team player attitude and willingness to work within a large diverse team.
Commitment and passion for highend service always ensuring the highest level of guest satisfaction.
Ability to work in a fastpaced highvolume environment.
Adhere to strict stock rotation and minimum wastage guidelines.
Ability to maintain a clean hygienic and safe working environment.
A want to grow and progress within the industry
Relevant experience in a premium restaurant/banquet kitchen
Enthusiasm and creative approach to providing highquality cuisine
Planning and organisational skills
Demonstrated understanding of Australian food safety WHS and HACCP
Availability to work weekends and public holidays as required within a rotating roster
Well presented punctual and reliable
Ability to prioritize and work under pressure
Remuneration offered will be dependent on skills and experience.
