We are seeking a talented and experienced Chef de Partie Gardemanger to join our culinary team in Mumbai India. As a key member of our kitchen brigade you will be responsible for overseeing the cold kitchen section ensuring the highest standards of food quality and presentation.
- Prepare and present a wide variety of cold dishes including salads appetizers canaps and charcuterie
- Develop and execute new menu items in collaboration with the Executive Chef
- Ensure proper food storage handling and sanitation practices are followed in the cold kitchen
- Manage inventory and minimize waste while maintaining quality standards
- Train and supervise junior kitchen staff in cold food preparation techniques
- Collaborate with other kitchen sections to ensure smooth service operations
- Maintain a clean and organized work environment
- Assist in menu planning and recipe development for cold dishes
- Adhere to all food safety regulations and company policies
Qualifications :
- Culinary degree or diploma from a recognized institution
- Minimum 23 years of experience as a Chef de Partie or in a similar role
- Proven expertise in cold food preparation and presentation
- Strong knowledge of food safety and sanitation practices
- Excellent knife skills and proficiency in various cutting techniques
- Experience in highvolume or fine dining restaurants
- Ability to work efficiently in a fastpaced environment
- Strong organizational and time management skills
- Team player with excellent communication abilities
- Creativity and passion for culinary arts
- Uptodate Food Safety Certification
- Knowledge of various cuisines and current culinary trends
- Physical stamina to stand for extended periods and lift heavy items
- Flexibility to work varying shifts including weekends and holidays
