You will be updated with latest job alerts via emailWe are seeking a passionate and skilled Assistant South Indian Chef specializing in Kundapura Cuisine to join our culinary team. The ideal candidate should have handson experience in preparing authentic coastal Karnataka dishes with expertise in traditional cooking methods spices and flavors unique to Kundapurastyle cuisine.
Assist the Head Chef in preparing and executing traditional Kundapurastyle dishes including signature curries seafood specialties and vegetarian delicacies.
Ensure consistency in taste quality and presentation while maintaining authentic South Indian flavors.
Handle food preparation marination and cooking using traditional techniques such as tempering (oggarane) stone grinding and slow cooking.
Manage kitchen hygiene food safety and sanitation standards in compliance with health regulations.
Assist in menu planning suggesting new dishes that reflect the rich culinary heritage of the Kundapura region.
Maintain inventory levels manage stock rotation and ensure the freshness of ingredients.
Work collaboratively with kitchen staff to ensure efficient kitchen operations.
Adapt to customer preferences while preserving the authenticity of the cuisine.
Proven experience 2 years) as an Assistant Chef or Cook specializing in Kundapura Cuisine or Coastal Karnataka dishes.
Strong knowledge of traditional spice blends seafood preparation and cooking techniques unique to the region.
Ability to work in a fastpaced kitchen environment and follow instructions from the Head Chef.
Familiarity with ingredients like Byadgi chilies coconutbased gravies Kori Rotti Neer Dosa and Ghee Roast.
Good understanding of kitchen hygiene and food safety practices.
Team player with excellent time management skills.
Culinary certification is a plus but not mandatory if the candidate has relevant experience.
Experience in handling largescale food preparation for restaurants or catering services.
Familiarity with traditional cooking equipment like woodfired stoves clay pots and stone grinders.
Basic knowledge of food cost control and portion management.
