As part of our growth we are introducing Calo Build Your Own (BYO) a live guest-facing food concept inspired by fast-casual and customizable food brands. This concept focuses on freshly built customizable bowls and wraps prepared on the spot while maintaining Calos quality nutrition and food safety standards.
Role Overview
We are looking for a Hot Line / Cold Line Specialist to join our Calo Build Your Own (BYO) concept. This role is ideal for candidates with hands-on experience in fast-casual live food stations and made-to-order service who are comfortable working in front of customers.
The Hot Line / Cold Line Specialist is responsible for executing Calos build-your-own bowls and wraps experience ensuring food is reheated assembled and served with speed accuracy and care. The role requires strong operational discipline attention to detail and excellent food safety awareness in a customer-facing environment.
Main Responsibilities
- Prepare build and assemble bowls and wraps live according to customer selections and Calo BYO standards
- Ensure fast accurate and consistent service during high-volume periods
- Maintain high standards of food quality freshness presentation and portion control
- Own and operate the assigned BYO station during service
- Set up and break down the station ensuring full mise en place is restocked before each shift
- Monitor stock levels and communicate refill requirements to the kitchen team
- Guide customers through menu items and customization options confidently
- Answer ingredient dietary and allergen-related questions accurately
- Follow FIFO hygiene and food safety standards at all times
- Monitor holding and service temperatures to ensure compliance
- Maintain a clean organized and efficient workstation throughout service
- Work closely with kitchen bar and CX teams to ensure smooth service flow
- Support new menu launches tastings and training sessions
- Maintain a positive professional and team-oriented attitude
Ideal Candidate
Qualifications
- Previous experience in fast-casual live stations or customer-facing food concepts
- Experience with build-your-own or assembly-line service models (e.g. Chipotle Sweetgreen Subway Pret Joe & The Juice hotel live stations)
- Strong hands-on food handling experience
- Basic understanding of food safety and hygiene practices
- Currently based in KSA
- Comfortable communicating in English (Arabic is a plus)
Knowledge & Competencies
- Strong understanding of speed and accuracy in live service environments
- Good knowledge of food safety hygiene and temperature control
- Ability to follow SOPs recipes and portion standards consistently
- Ability to handle repetitive tasks while maintaining quality and focus
- Strong teamwork and communication skills
Personality & Attributes
- Comfortable and confident working directly in front of customers
- Calm friendly and professional under pressure
- Customer-focused with a strong service mindset
