- Is punctual and dressed for work at a scheduled time.
- Meets with the Chef de Partie for any special instructions.
- Completes inventory checklist of his equipment, fridges & coolers temperatures, shelves, and any other item that may be necessary to complete the job including kitchen utensils and service equipment.
- Checks his prep list.
- Communicates with the Chef de Partie to find out the specials for the day, any special instructions, forecast, reservations, etc.
- Maintains food quality and presentation at all times. Prepares food with “flair".
- Prepares all mise-en-place for the restaurant according to the menu, the specials and as per standardized recipes when assigned by his Chef de Partie.
- Adheres to specifications, recipes, weights, charts, waste, and preparation at all times.
