Sous Chef Needed High Volume Upscale Italian Restaurant

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.

  • Performs daily shift responsibilities while supervising all back of the house staff ensuring 100% guest satisfaction
  • Monitor breaks and staffing
  • Checklists (food quality temperature)
  • Preshift meeting
  • Monitor 5Star Standards
  • Supervises food preparation production and service in all areas of the kitchen and line.
  • Records delivery of merchandise and properly files invoices.
  • May cook and prepare food items alongside employees to ensure proper procedures. May assist during a rush.
  • Conducts interviews makes hire recommendations completes new hire paperwork trains disciplines and makes termination recommendations for back of the house employees.
  • Conducts performance reviews for back of the house employees.
  • Supervises the cleanliness and sanitation of the kitchen storage and surrounding areas.
  • Enforces compliance of all safety & security procedures.
  • Completes documentation related to food safety facility safety and security procedures.
  • Coordinates with management necessary repairs and maintenance.
  • Coordinates with Chef or Senior Sous Chef monthly food inventory work schedules and administrative duties.
  • Identifies possible problems and responds to them in a professional and constructive manner
  • Follows up on opening and closing staff side work.
  • Upholds 5Star Service standards.
  • Completes supervisory responsibilities in accordance with company policies and procedures and all applicable laws.
  • Maintains a professional and acceptable appearance at all times.
  • Upholds a positive attitude that enforces a good working environment.
  • Works as a team player; has a pleasant and helpful attitude toward guests and staff members to ensure guest satisfaction. Exemplifies the companys core values of honesty integrity respect commitment and quality fanaticism.

Strong kitchen and dining room experience with attention to the details of our authentic Italian cuisine recipes and execution is required.

1 years prior experience as a Sous Chef Kitchen Manager or Supervisor required.

Daily responsibilities include:

  • Food preparation and service for all meal periods
  • Recipe adherence with special attention to timely preparation and plate presentation
  • Training and supervising kitchen staff
  • Adhering to food and facility safety requirements including all COVID protocol
  • Ensuring that quality and cost standards are consistently obtained
  • Completing kitchen administrative and human resource duties
  • Inventory ordering and scheduling with service and cost control measures in place
  • The Sous Chef should have a positive attitude and be able to communicate clearly professionally and respectfully.
  • Experience in a full service fine dining upscale restaurant is a plus.
  • Must have a flexible schedule and able to work varied shifts including weekends.
