Executive Chef Responsiblities & Accountabilities

Objective

To lead kitchen staff and subsequent employees of Our Client to deliver a high level of food quality to each guest whether choosing to dine in or carryout with us. To provide support and leadership for Sous Chefs and in their responsibilities and accountabilities. To operate with a strong code of ethics and be an example of Our Client companys values. To provide highest quality food for all guests. Executive Chefs is to be responsible for the items below but not limited to based on the GM direction:

Primary Responsibilities
  • Guest food quality through maintenance and oversight of Clients Culinary Standards
  • Oversee the hiring of cooks prep cooks and dishwashers with Sous Chef
  • Ensure proper Training of cooks prep cooks and dishwashers with Sous Chef
  • Review weekly schedules with Sous Chef
  • Prep and station prep list are used as a tool to better drive food quality and minimize waste
  • Meat counts are completed and reconciled by appropriate times
  • Weekly food quality related preshift topics presented to management team in weekly meeting
  • Shift execution within company guidelines for ticket times and recipe adherence
  • Line check completed by appropriate times
Secondary Responsibilities
  • Weekly food inventory completed by appropriate times
  • Weekly food & supply ordering completed by appropriate times
  • Utilization of purchase tracker for ordering food & supplies
  • Utilization of on hands for ordering food & supplies to ensure not 86ing product
  • Weekly food & supply invoices and checks completed by appropriate times
  • Maintain food cost at or below company budget
