Rome Cavalieri A Waldorf Astoria Hotel is seeking a highly skilled and visionary Drink Manager to lead and elevate the beverage experience across the property.
Reporting directly to the F&D Manager this strategic role has transversal scope across all hotel venues and is designed to elevate standardize and innovate the beverage experience positioning drinks as a stronger pillar of the hotels identity and guest journey.
The position combines operational leadership beverage expertise guest experience commercial oversight and creative programming. The successful candidate will act as custodian of beverage standards across the hotel curating a holistic drinks identity spanning cocktails spirits coffee tea and supporting the wider wine experience.
Key Responsibilities
Operational Leadership & Beverage Standards
- Lead and standardize the beverage experience across all hotel venues including Tiepolo Lounge and terrace Uliveto restaurant Pool Bar Patio Spa Imperial Club and Room Service.
- Ensure excellence consistency and innovation in beverage service standards rituals and presentation.
- Support venues teams in embedding a cohesive beverage philosophy across the property.
Mixology & Beverage Expertise
- Curate and develop sophisticated cocktail programs demonstrating strong expertise in mixology premium spirits and distillates.
- Drive beverage innovation while preserving luxury standards and guest expectations.
- Support the Sommelier team in strengthening the overall beverage proposition including wine integration.
Training & Experience Development
- Elevate beverage knowledge across teams through structured training and coaching.
- Strengthen standards and know-how in cocktails coffee tea and service rituals across all outlets.
- Act as an internal subject matter expert and ambassador for beverage excellence.
Programming Marketing & Activations
- Lead and execute drink activations linked to Waldorf Astoria brand programming Taste of Hilton initiatives and the Destination Bar Programme acting as the property lead for these platforms.
- Develop and manage the beverage marketing calendar including activations and rituals such as aperitivo tea time and seasonal experiences.
- Collaborate closely with Commercial and Marketing to shape the image storytelling and positioning of the hotels beverage identity.
Commercial & Financial Responsibilities
- Oversee beverage inventory strategy and support control of beverage cost in close collaboration with Finance.
- Support pricing strategy menu engineering and supplier relationships to drive profitability while maintaining quality.
Industry Presence & Representation
- Maintain an active presence within the beverage community including cocktail networks as well as coffee and tea communities.
- Represent Rome Cavalieri A Waldorf Astoria Hotel externally and contribute to reinforcing its positioning within the luxury beverage and hospitality landscape.
The ideal candidate will demonstrate:
- Proven luxury hospitality experience in beverage leadership roles
- Advanced mixology expertise and strong knowledge of premium spirits
- Understanding of broader beverage culture including coffee and tea
- Strong commercial and financial acumen
- Leadership presence with a training-oriented mindset
- Creativity in experiential programming and guest engagement
- Strong industry network and passion for innovation
