Description of Work

Johnston Correctional Institution is a minimum custody facility that can house up to 668 inmates including 28 Restrictive Housing beds. This position requires a thorough knowledge of the methods materials and equipment used in large-scale cooking food service activities food service management techniques and health regulations to ensure proper food preparation storage and sanitation of the food service section.

Knowledge Skills and Abilities/Management Preferences

Salary Range: 39244.00 - $68679.00

Work includes but is not limited to communicating verbally and in writing; comprehend and calculate menus; observe sanitary food handling practices; understand food nutritional values; inventory and rotate stock. Preform rescue functions such as CPR first aid firefighting engage in physical activities necessary to control and apprehend inmates; defend against physical attacks. Distinguish color codes used for emergencies and security purposes; operating locking devices and maintain keys. Complete CPR firearms and unarmed self-defense training and work a varied schedule Plan coordinate and supervise all food service activities within the facility. Ensure compliance with NCDAC policies state sanitation standards and health regulations. Oversee food preparation storage and distribution in accordance with established nutritional guidelines. Supervise train and evaluate staff and assigned offender workers. Maintain accurate records including inventory meal counts and food usage. Monitor kitchen operations to ensure safety cleanliness and proper food handling.
Conduct routine inspections and enforce sanitation and safety procedures. Manage ordering receiving and storage of food and supplies.

This is a full-time position (40 hours per week) withState Benefits.

The Knowledge Skills and Abilities (KSAs)/ Management Preferences are not required. Applicants who possess the following skills are preferred:

  • Documented knowledge and use of the offender disciplinary process.

  • Demonstrates considerable knowledge of food service operations including methods materials equipment procurement inventory and therapeutic diet requirements.

Minimum Education and Experience

High school or General Educational Development (GED) diploma and four years of experience in institutional food preparation and food services in management of a commercial food service operations or one year as a Correctional Food Service Supervisor; or an equivalent combination of education and experience. Necessary Special Qualifications Must be eligible for certification by the North Carolina Criminal Justice Education & Training Standards Commission.
