Culinary Manager-11 West Private Unit-Mount Sinai Hospital-Full Time Day Shift Flexible with Weekends

Direct supervision of all employees engaged in production and preparation of food service for 11W The Faculty Club and the Department of Catering with the overall operation of 11W culinary staff.



Responsibilities
  • Creates and prepares new menu items on a regular basis to provide customers with constant product upgrade.
  • Establishes standardized recipes for all menu selections and monitors food prep by food preparers and sous chefs to ensure standards are maintained.
  • Orders raw and prepared foods through central Food Service Purchasing and directly through vendors. Reconciles food bills.
  • Supervises and assists food preparers and sous chefs in production and preparation of food & beverages etc. for all meal periods. Monitors all outgoing orders for accuracy and presentation.
  • Consults with clients on a continual basis in planning menus for catered events; orders additional items and/or services required.
  • Prepares work schedules for employees assigned to 11W and Catering Departments kitchen to ensure adequate coverage; performs training and orientation.
  • Hires evaluates discharges and implements disciplinary actions to employees.
  • Meets with Guest Service Director on a weekly basis to discuss operational concerns.
  • Handles all payroll for culinary department and maintains records of schedule and payroll logs.
  • Ensures weekly sanitation schedule and monitors workers to ensure completion.
  • Proactive in seeking out new vendors who can provide better quality within budgetary constraints.
  • Ensures that the food quality is up to the standards established for the department.
  • Performs other related duties.


Qualifications

Education Requirements

  • Bachelors degree in culinary or related field

Experience Requirements

  • 2 years of culinary management experience
  • Experience with menu development and pricing preferred
