Your Role in the Story
As a Chef de Partie you will play a crucial role within our kitchen team overseeing a specific station and ensuring that all dishes are prepared to the highest standards of quality consistency and presentation. You will work in alignment with the Paris Society concept and LUURA brand standards delivering an exceptional culinary experience whether operating within Mimi Kakushi or Lenea restaurant.
The role requires a strong understanding of culinary techniques international cuisine and food safety regulations as well as the ability to perform efficiently in a high-pressure fine-dining environment. Your creativity and meticulous attention to detail will help ensure that every plate reflects the concept and provides a memorable dining experience for our guests.
Key Responsibilities
- Manage and oversee a specific section of the kitchen ensuring smooth and efficient operations during service; as per Sous Chef and Head Chef guidance.
- Prepare cook and present dishes according to the restaurants standards recipes and the Paris Society concept and LUURA brand standards.
- Ensure consistent portion control quality and presentation of all dishes prepared in the assigned section.
- Ensure proper mise en place preparation for the assigned station prior to service.
- Check all dishes leaving the section to ensure they meet presentation taste and temperature standards.
- Supervise guide and train Commis Chefs and junior kitchen staff working within the assigned section.
- Maintain high standards of hygiene cleanliness and food safety ensuring full compliance with HACCP regulations.
- Ensure proper food labeling storage and stock rotation (FIFO) in accordance with food safety standards of Luura.
- Monitor stock levels assist with ordering supplies and support food cost control while minimizing food waste.
- Coordinate closely with the Sous Chef and Head Chef to ensure smooth kitchen operations and efficient service.
- Ensure all kitchen equipment is used correctly and maintained in good working condition.
- Ensure that all dishes are prepared and served accurately and on time during service.
- Ensure the assigned workstation is cleaned organized and prepared for the next shift.
- Provide support to other kitchen sections when required to ensure smooth overall kitchen operations.
Qualifications :
Who Were Looking For
- Diploma or degree in Culinary.
- 35 years experience as Chef de Partie in high- end Luxury or lifestyle restaurants ideally in all- day dining or high-volume design-led concepts.
- Proven experience in pre-opening in a luxury or lifestyle restaurant is highly preferred.
- Strong knowledge of food preparation cooking techniques and presentation standards with attention to detail and consistency.
- Ability to work efficiently under pressure in a fast-paced kitchen environment.
- Excellent communication and teamwork skills to coordinate with the team.
- Strong attention to detail and organization skills
- Fluency in English; additional languages are considered a plus.
- Eligibility to work in an EU country.
- Passionate about hospitality culinary trends culture and the art of service.
