The Sous Chef Italian Cuisine supports the Executive Chef in overseeing daily kitchen operations with a focus on authentic and contemporary Italian dishes. Responsible for maintaining high food quality consistency and presentation standards in line with Palace policies.
Key Responsibilities:
Supervise preparation of Italian cuisine.
Ensure food quality hygiene (HACCP) and portion control standards.
Assist in menu planning costing and inventory management.
Train and supervise junior culinary colleagues.
Maintain cleanliness safety and smooth kitchen operations during service.
Qualifications :
Culinary diploma/degree.
46 years experience in Italian cuisine within a hotel or fine-dining restaurant.
Strong knowledge of Italian ingredients and cooking techniques.
Leadership skills and ability to work in a fast-paced environment.
