As Sous Chef Banquets you will:
- Lead and inspire a team of talented chefs to deliver world-class cuisine for bespoke banquets conferences and events; from intimate meetings to grand banquet events.
- Collaborate closely with the Executive Chef to design refined innovative menus that showcase local produce with French flair.
- Oversee all aspects of banquet kitchen operations - from preparation and plating to logistics and service timing ensuring excellence in every detail.
- Maintain the highest standards of food quality hygiene and HACCP compliance.
- Foster a culture of creativity teamwork engagement and pride within the kitchen brigade.
- Play a key role in enhancing the hotels event offering and culinary reputation as we elevate our banquet experience for the year ahead.
Qualifications :
What you will bring to the role:
- Recognised culinary qualifications with prior experience as a Sous Chef or Chef de Partie in a luxury hotel or banqueting environment.
- Proven ability to manage large-scale kitchen operations and coordinate high-volume functions without compromising quality.
- Strong knowledge of French and modern Australian cuisine with an eye for presentation and precision.
- Excellent leadership communication and organisational skills with the ability to mentor and motivate a diverse team.
- Ability to thrive during high volume events while maintaining a calm professional demeanour.
- A genuine passion for hospitality and commitment to exceeding guest expectations.
- Flexibility to work a rotating roster including weekends evenings and event schedules as required.
