Job Summary

  • Coordinate and oversee daily operations across multiple kitchen sections.
  • Ensure food quality consistency and timely preparation according to established recipes and standards.
  • Adapt and develop recipes to meet operational requirements and guest preferences.
  • Maintain proper storage sanitation and upkeep of food equipment and supplies.
  • Monitor inventory levels and ensure adequate stock for smooth kitchen operations.
  • Recommend menu enhancements process improvements and cost-saving initiatives to the Executive Chef or Executive Sous Chef.
  • Support the maintenance and sanitation of all kitchen equipment and facilities.
  • Manage stock control to minimize waste losses and breakage.
  • Ensure strict compliance with Food & Beverage policies hygiene and food safety standards.

  • 食材機材備品の適切な保管衛生管理および整備を維持する
  • 在庫状況を把握し円滑な厨房運営のために必要な食材物品を確保する
  • エグゼクティブシェフまたは副料理長に対しメニュー改善業務効率化コスト削減等の提案を行う
  • 厨房設備および機器の保守衛生管理を支援する
  • 在庫管理を徹底し廃棄紛失破損を最小限に抑える
  • ホテルのF&B料飲ポリシー衛生基準および食品安全基準を遵守し高い衛生水準を維持する

Qualifications :

  • Native-level Japanese proficiency in both written and spoken communication; English ability is an advantage but not required.
  • Strong knowledge of Japanese food safety and hygiene laws including regulations on food poisoning and allergy prevention.
  • Familiarity with local and national food production standards and related regulatory requirements.
  • Broad knowledge of international and Asian cuisines with a focus on innovation and creativity.
  • Proven leadership capabilities and excellent communication skills.
  • Ability to plan forecast and manage operations effectively.
