Job Summary
Overview
The Overnight Baker plays a vital role in bringing The Butterys pastries to life each day. Working from 10pm6am youll prepare proof and bake a variety of pastries with precision and care ensuring every item meets our high standards for flavor quality and consistency.
This is a hands-on role for someone who takes pride in their craft thrives in a fast-paced collaborative environment and finds joy in the quiet rhythm of overnight baking. If you love the smell of fresh pastry and the satisfaction of knowing you helped make someones morning a little brighter wed love to meet you.

Key Responsibilities
- Daily Production: Prepare proof and bake a variety of baked goods and viennoiserie following established recipes and production guidelines.
- Time Management: Execute baking schedules to ensure all products are ready for delivery on time without compromising quality.
- Quality Assurance: Monitor and maintain consistency in taste texture and presentation across all baked goods.
- Equipment Operation: Safely operate mixers ovens proofers and other baking equipment.
- Organization & Cleanliness: Maintain a clean organized and food-safe workspace adhering to hygiene and safety standards.
- Team Collaboration: Work closely with other bakers and kitchen staff to meet production goals efficiently.
- Problem-Solving: Identify and address any issues during the baking process to ensure quality and timeliness.
Qualifications
- 1 year of professional baking experience preferably in bread viennoiserie or pastry production.
- Strong understanding of baking processes including proofing fermentation and lamination (preferred but not required).
- Ability to manage time effectively in a high-volume fast-paced environment.
- Excellent attention to detail and a commitment to quality.
- Flexibility to work early mornings weekends and holidays as needed.
- A team-oriented mindset and willingness to take direction.
- Effective communication and collaboration skills to work with cross-functional teams.
- Physical ability to lift up to 50 pounds stand for extended periods and perform repetitive tasks.
