What you will be doing:
 

  • Lead the daily production of desserts and pastry items for the hotels restaurant outlets ensuring all products meet Fairmonts high standards of quality taste and presentation.
  • Prepare a variety of desserts including plated items pastries cakes tarts and frozen components while maintaining portion and recipe consistency.
  • Assist in developing new dessert concepts seasonal offerings and menu enhancements in collaboration with the Pastry Chef.
  • Maintain excellent product rotation labeling and storage practices to ensure freshness and minimize waste.
  • Organize and prioritize daily mise en place to ensure smooth restaurant service.
  • Ensure work areas tools and equipment are clean sanitized and well maintained at all times.
  • Adhere strictly to all food safety sanitation and occupational health standards as outlined by the hotel and local regulations.
  • Ensure all ECOSURE documentation is accurately completed including temperature logs labeling and cleaning schedules.
  • Collaborate effectively with the restaurant and banquet teams to ensure seamless coordination and timely service

Qualifications :

Your experience and skills include:

  • Minimum 45 years of professional pastry experience with a strong focus on plated desserts and restaurant service.
  • Demonstrated skill in modern and classic pastry techniques including mousses sponges tarts sauces and garnishes.
  • Proven ability to manage multiple tasks and maintain consistency under pressure during service periods.
  • Strong leadership and communication skills with the ability to mentor and support junior team members.
  • A creative mindset with the ability to contribute ideas for new dessert concepts and menu items.
  • Excellent organizational and time management skills.
  • Completion of a recognized pastry or culinary program is preferred.
  • Flexibility to work varied shifts including early mornings evenings weekends and holidays.
