Job summary
Train and Manage kitchen personnel and supervise all related culinary activities for a specific business unit. Manage budgetary expenses for assigned locations.
Essential job functions and responsibilities
- Estimate food consumption and identify food quantities needed to purchase to meet estimates.
- Select and develop new recipes
- Develop menu plan and prices
- Standardize production of recipes to ensure consistent quality.
- Establish and standardize presentation and quality techniques.
- Oversee and ensure kitchen personnel maintain equipment operation and maintenance maintain proper safety and sanitation requirements.
- Oversee special catering events and offer culinary instruction.
- Responsible for managing maintaining total department costs against budget. Estimate annual department costs for each fiscal year.
- Manages performance discipline hiring and firing of personal

Qualifications
Minimum requirements
- Bachelors degree in Business Administration and/or mix of equivalent experience
- Minimum of seven years of culinary management experience
- Certified Professional Management experience preferred
State/Federal Mandated Licensure or Certification Requirements
None required
Bristol Hospital Mandated Educational Requirements
General orientation at time of hire. Fire/Safety/Infection Control annually. Other programs as mandated.
Physical Requirements
Ability to lift up to 50 lbs. to waist level 15-30 lbs. to chest level. Free range of body motion so that tasks which require walking bending twisting stooping and reaching can be completed. Prolonged standing for periods of two or more hours at a time is required. Visual ability to speak English. Significant computer and phone usage.
