Job Summary:
Catawba Two Kings Casino is seeking a Director of Food & Beverage to join our this role the successful candidate will be a strategic and operational leader responsible for the overall performance guest experience and profitability of all food and beverage outlets within a dynamic high-volume casino environment. This role oversees 11 uniquely branded bars and 5 distinct restaurants including two fine dining venues and three high-volume fast-paced concepts. The Director will lead departmental strategy manage multi-unit teams and drive continuous improvement in service excellence operational efficiency labor management and revenue generation.
Responsibilities:
Leadership & Strategy
Provides strategic direction leadership and operational oversight to all food and beverage outlets.
Leads coaches and develops a large multi-layered team including managers chefs mixologists and frontline staff.
Partners with executive leadership to align food and beverage goals with the casinos overall business objectives.
Fosters a positive image and reputation for the restaurants and culinary destinations through community outreach and corporate social responsibility initiatives.
Operations & Execution
Ensures world-class guest experiences across all venues with an emphasis on consistency quality and brand standards.
Maintains high performance in fine dining casual dining and bar operations adapting service models for varying volume and clientele.
Oversees compliance with health safety sanitation and licensing requirements.
Financial Management
Develops manages and analyzes department budgets including labor cost of goods sold and capital expenditures.
Drive profitability through menu engineering pricing strategy promotional planning and inventory control.
Identifies and implements cost-saving and revenue-generating initiatives across all F&B units.
Guest Experience Excellence & Innovation
Leads new concept development menu innovation beverage program enhancements and seasonal promotions.
Leverages guest feedback competitive benchmarking and market trends to continuously evolve offerings.
Ensures all venues reflect the casinos overall brand and elevates the guest experience.
Collaboration & Compliance
Works cross-functionally with marketing events gaming facilities security and human resources to support broader property initiatives.
Leads training and performance standards in alignment with company values and guest service excellence.
Ensures compliance with all federal state and local regulations including gaming and alcohol laws.
Perform other duties as assigned
Qualifications:
Bachelors degree in hospitality management business or related field preferred or 7 years of progressive food and beverage leadership experience in a high-volume resort or casino environment.
Proven experience managing large food and beverage teams overseeing multiple outlets and maintaining profitability in a competitive food and beverage landscape.
Proven success managing both fine dining and high-volume casual or quick-service operations.
Strong knowledge of food and beverage financials cost control labor optimization and P&L management.
Must be able to obtain and maintain a valid Catawba Gaming License as required by tribal and state authorities.
Must be at least twenty-one (21) years of age.
Preferred Attributes:
Experience in casino resort or entertainment-based environments.
Proven experience working in or leading teams at Michelin-starred restaurants or James Beard Award-winning establishments.
Expert-level knowledge and technical skillset including advanced beverage knowledge mixology wine list curation vendor management and global cuisine familiarity.
Deep knowledge of ServSafe TIPS or other safety/alcohol certifications a plus.
Knowledge Skills & Abilities:
Flexibility in scheduling including availability to work nights weekends holidays and for special events as required by business needs.
Proficiency in food costing recipe development software POS systems and Microsoft Office Suite (Word Excel Outlook and PowerPoint)
Excellent communication interpersonal and conflict resolution skills.
Ability to remain calm focused and solution-oriented even in high-pressure or guest-facing situations.
Ability to follow verbal and written instructions.
Ability to communicate both verbally and in writing.
Ability to work in a loud fast-paced environment (may occasionally be exposed to second-hand cigarette smoke).
Physical Requirements:
While performing the duties of this position the employee is regularly required to reach with hands and arms; bend to open/use lower drawers or cabinetry; to talk hear and see. Prolonged periods of sitting at a desk and working on a computer. The employee is occasionally required to stand; walk; climb or balance; stoop kneel crouch or crawl. The employee must occasionally lift and/or move up to 30 pounds.
