Job Description

Pastry we make : Napoleon Eclair Royal Tiramisu. Opera MilleFeuille. Macaron Entremet /mousse Birthday cake...

Salary or hourly rate depends on experience skills and value-add to Caf Vendme business.

Important: Hiring Decision after 2 days of STAGE !

Caf Vendme is looking for Pastry chef to join our team. Partial time or Full time : 2 to 5 days a week.

Important: Willingness to learn or improve the French baguette and croissant .

!! Must be willing to work on all domains. NO separation of pastry viennoiserie and baguette tasks in Caf Vendme We can train you in viennoiserie and baguette if need be!!

At Least 1 or 2 years of proven experience in Authentic French style pastry.

Expectations:

Required pastries & viennoiseries:

- Macarons eclairs tartelettes royal tiramisu millefeuille opera various entremets (such as fruits mousse).

- Madeleinecroissants chocolate croissant pain au raisin almond croissant pepito/pain suisse.

  • Baguettes tradition and Challah bread (We can train you if needed)
  • Creme brule.
  • Develop new addition to themenu such as French cookies birthday cakes and special French pastries such as fort noire fraisier cannel or any of your favorites and specialties.

-First 2 months goal:

  • Mastered all menu items produced in Caf Vendme main Lab.
  • Manage the complete inventory of items produced and items ordered
  • Build aPAR system set up to handle production schedule
  • Confirm the PAR system set up to handle ordering/inventory needs
  • Organize/re-organize as needed to maximize efficient use of lab space
  • Have a working proficiency and communication with front team such as : barista/servers.

Other Goals and requirements:

  • Train all new hires for redundancy share and document any recipe used in Caf Vendme in our folder ( electronic and paper print).
  • Work on increasing revenue through sales of custom work and higher ticket items

- Manage the inventory for Caf Vendme Kitchen items. An excel Spreadsheet on google drive will be provided.

- Manage the ordering for Caf Vendme Kitchen items.

  • Reduce Caf Vendme Global food cost and waste.
