Job Description

Pelican Golf Club is seeking a talented and passionate Sous Chef to join our culinary team. The ideal candidate will play a vital role in maintaining the high standards of our kitchen ensuring that all food preparation and presentation meet our fine dining expectations. The sous chef will be working alongside Executive Chef Jorge Martinez. We pride ourselves on our seasonal menus and chefs who develop new and innovative meals. Our Sous Chefs are the foundation that our kitchens are built. We are looking for hard-working team players who can consistently create and deliver quality products. Because our seasonal menus are constantly evolving our Sous Chefs are always developing dishes and perfecting their craft.

The Pelican is a Private Member only golf club with multiple kitchen operations. Whether it is for our quick service restaurant Bistro1501 our luxury fine dining restaurant The Albatross or for our special events and catering operations we are seeking someone who is highly organized creative and cannot only lead but train a team.

This is a full-time position. The Pelican Golf Club offers a competitive pay scale based on a skill-based assessment and previous industry experience. Our full-time chefs enjoy a positive work-life balance.

Position Summary:

  • Responsible for the daily production of all food services in their designated kitchen.
  • Assists in the creation of the restaurant menu and recommends menu changes.
  • Ensures that all food served is of the highest quality and that it is ready to be served to the member at the appropriate time.
  • Promote and maintain team cohesion.
  • Uphold the values and standards set by the Pelican Golf Club

Essential Duties and Responsibilities:

  • Ensure preparation plating and presentation standards are maintained the appropriate quantity of food is prepared and safety standards and regulations are followed to provide top-quality food.
  • Supervise kitchen associates as well as train develop empower coach resolve and fix problems and provide open communication
  • Monitor and control the maintenance and sanitation of the kitchen and equipment to ensure a healthy and safe work environment that meets and exceeds federal state corporate and franchise standards and regulations.
  • Work closely with the Executive Chef on any special duties or projects outside of normal workflows.

Other Keys to Success

  • Effective communication with the Executive Chef Sous Chef Special Events Manager and other Managers to attain the highest member/guest satisfaction
  • Create various menu items and daily specials for menus which may include garnishes and overall presentation of product for guest satisfaction
  • Maintaining the 5-star quality of food preparation and presentation through active participation in all functions from planning to plating
  • Supervises/set up and organization of work area with all necessary supplies and equipment
  • Oversees/receives inspects and rotates all food products to ensure that only fresh high-quality ingredients are used
  • Supervises preparations and storage of raw food products before final assembly of hot food items
  • Ensures that all standardized recipes are followed in the preparation and assembly of cold menu items
  • Uses knives slicers mixers choppers grinders and all other equipment safely according to the manufacturers recommendations
  • Communicates daily with department employees to obtain/provide current information regarding daily activities/functions and upcoming events

Qualifications

  • Proven experience in food preparation within a fine dining or high-volume restaurant environment.
  • Strong knowledge of kitchen management practices including inventory control and food safety regulations.
  • Experience in banquet service is preferred with the ability to manage large-scale events effectively.
  • Excellent menu planning skills with a creative approach to food production.
  • Ability to work collaboratively within a team while also demonstrating leadership capabilities.
  • Strong communication skills and a passion for delivering exceptional dining experiences.
