DELI & KITCHEN MANAGER (RETAIL OPERATIONS)

BLUFF DURBAN KWAZULU NATAL

MINIMUM ESSENTIAL QUALIFICATIONS:

  • Matric
  • Relevant Culinary Tertiary Qualification(ADVANTAGEOUS)
  • Experience in Recipe development culinary operations & kitchen management
  • Strong knowledge of food safety and hygiene practices
  • Excellent organisational and communication skills
  • Able to analyse data & adjust menus & recipes
  • Highly experienced in training and leading kitchen teams (retail operations)
  • Strong documentation & reporting skills coupled with attention to detail
  • Confident to manage multiple operational priorities effectively
  • Highly experienced in retail operations for Stores / Branches
  • Computer proficiency: MS Office programmes & retail ERP systems
  • Travelling to various branches in Durban
  • Own reliable vehicle & valid Drivers Licence(ESSENTIAL)

BRIEF DESCRIPTION OF KEY PERFORMANCE AREAS DUTIES & RESPONSIBILITES:

Main duties & Job Function:

  • Oversee the daily operations of the Deli & Kitchen Departments of various Branches (stores) and ensure smooth and effective running.
  • Maintain constant and effective contact with Department staff compliment and ensure great customer experiences and monitor customer services excellence including health and safety and high quality of foods delivered to customers of the store.

Key Performance Areas and Responsibilities: -

  • Develop test and standardize recipes ensuring high quality taste nutritional value and food safety compliance.
  • Document recipes with clear preparation instructions ingredient lists and presentation guidelines.
  • Analyse recipe and ingredient costs to maintain profitability and manage budget controls.
  • Assist in menu design incorporating seasonal and promotional items.
  • Monitor recipe and menu performance using sales data and customer feedback adjusting as needed.
  • Lead and train kitchen staff on recipes cooking techniques food safety and equipment use.
  • Manage day-to-day kitchen operations including stock control equipment maintenance and adherence to hygiene standards.
  • Ensure consistent food quality presentation and adherence to company standards through regular store visits and quality checks.
  • Oversee production of home replacement meals according to standardised recipes.
  • Collaborate with store managers to set sales targets and optimise hot foods offerings.
  • Update pricing and promotions to support sales goals.
  • Maintain safe working conditions and ensure compliance with company procedures and health regulations.
