A prep cook is a kitchen staff member primarily responsible forpreparing ingredients by washing chopping slicing and measuring food items according to recipes ensuring proper food safety and organizing storage areas essentially getting all the components ready for the line cooks to cook the dishes on the menu;they also maintain cleanliness and sanitation in the kitchen workspace. The Prep Cook needs to be able to work independently and primarily works prior to restaurant opening in morning and afternoon hours.
Duties and responsibilities
Washing and cutting produce: Washing peeling chopping and slicing fruits and vegetables.
Meat preparation: Portioning and marinating meats.
Ingredient measuring: Accurately measuring ingredients according to recipes.
Food storage: Properly storing food items to maintain freshness and comply with sanitation regulations.
Inventory management: Assisting in checking inventory levels and restocking kitchen supplies.
Kitchen cleanliness: Maintaining a clean and organized workspace including washing dishes and sanitizing surfaces.
Following recipes: Adhering to established recipes and preparation guidelines.
Food safety compliance: Ensuring all food handling practices meet safety standards.
Knife skills: Proficiency in using knives to chop slice and dice ingredients accurately.
Attention to detail: Ability to precisely measure ingredients and follow recipes.
Physical stamina: Ability to stand for long periods and perform repetitive tasks.
Organization skills: Keeping the prep area clean and organized managing inventory efficiently.
Teamwork: Collaborating with other kitchen staff to ensure smooth service.
Food safety knowledge: Understanding proper food handling and sanitation practices.
Qualifications
Working conditions
The Prep Cook position is based primarily inside the base lodge but also includes outside and is exposed to temperature extremes (above 85 degrees and below 20 degrees) sun and wind exposure inclement weather (rain snow ice) and high altitudes (10500 feet).
Physical requirements
Must be able to walk on even/uneven/slippery terrain climb/descend even/uneven/slippery terrain climb/descend stairs stand and/or sit for long periods of time bend stoop reach push pull and lift objects that may be heavy.
