We are looking to grow our team by engaging a highly motivated and passionate Chef de Partie Cold Kitchen who will work closely with the culinary team to drive and deliver on the Fairmont promise turning moments into special memories.
Key Responsibilities:
Prepare and service all cold food items (salads dressings canaps terrines cold starters etc.) for la carte and buffet menus in accordance with hotel recipes and standards.
Ensure the cold kitchen operates efficiently and consistently meets food quality portioning and presentation standards.
Maintain proper rotation labeling and storage of all cold kitchen items to reduce waste and ensure freshness.
Conduct the cold section and ensure readiness for service.
Liaise daily with Outlet Chefs and other sections to coordinate production and receive feedback.
Monitor stock levels and place accurate and timely requisitions from the storeroom.
Maintain the cleanliness hygiene and organization of all cold kitchen work areas tools and equipment.
Adhere strictly to kitchen SOPs food safety standards and sanitation policies (e.g. HACCP).
Participate actively in daily briefings and contribute ideas suggestions and feedback for menu development and kitchen improvements.
Train guide and supervise junior staff within the cold kitchen section.
