Position Summary: Oversees all kitchen areas. Responsible for labor and food cost controls. Responsible to train cooks and set quality standards. Sets up daily work tasks by priority. Responsible for meeting goals and deadlines insures quality guest dining experience.
Essential Functions:
- Participate in all levels of food production
- Maintain company and department goals (set standards)
- Order product for daily production
- Maintain budgets and costs
- Monitor quality cleanliness and equipment use.
- Train on proper equipment use.
- Attend meetings do schedules write menus cost menus and any other jobs related to task.
Other Responsibilities
- Perform work related duties as assigned
- Innovative cutting edge techniques and cuisine for the lodge
- Introduce new product to staff and interact to solicit more productive task accomplishment
- Safety awareness and injury prevention
- Set agendas for scheduled staff meetings
Education Experience and skills required:
- 6 years management experience in high volume resort surrounding
- culinary graduate helpful
- strong communication organizational and administrative skills
- Utah food Handlers and Sanitation Certificate
- Ability to set quality standards/composure under pressure
- Open door policy with all employees
- Creative abilities manage to keep up on latest culinary trends
