- Working in partnership with the General Manager Hawthorn Dining Room & Bar you will execute the smooth and flawless operation of the Restaurant during all meal periods
- Accountable for managing the day-to-day operations of the kitchen with active presence on the floor
- Leading your team to deliver service excellence
- Effectively recruit and onboard new colleagues
- Train lead & develop the team in all aspects of the department and ensure service standards are followed
- Communicates effectively both verbally and in writing to provide clear direction to the team with the use of production lists recipes photos etc
- Maintains colleague engagement with the entire culinary and stewarding team. Promoting teamwork between the kitchen and all other departments.
- Accountable for driving revenue and profit through the development and implementation of menu design strategies practices and promotions while keeping with the overall concept
- Maintains awareness of and ensures compliance with all food safety & hygiene standards policies and procedures are followed at all times.
- Maintains a safe work environment and ensures that all health & safety standards are met procedures followed and that colleagues have the knowledge and tools to work safely.
- Effectively manage the departmental budget through purchasing of production needs inventories pricing and labor cost controls
- Constantly drive innovation and actively promoting the restaurant within the community
- Actively manage restaurant social media accounts in partnership with the Restaurant GM and Marketing Manager in accordance with Fairmonts marketing standards. (i.e. Facebook Instagram)
- Adheres to all Company policies procedures and values
Qualifications :
- Minimum of four years leadership experience in a kitchen or culinary environment
- Red Seal Certification preferred
- Diploma or Degree in Culinary Management considered a strong asset
- Proven expertise in menu development concept design effective marketing strategies and online reputation management
- Flexible availability to meet business needs including evenings weekends and holidays
- Excellent communication skillsboth written and verbaland strong interpersonal abilities
- Proficient in computer applications including Microsoft Excel Word and email systems
- Demonstrated ability to drive revenue and profitability while maintaining exceptional colleague and guest experiences
- Effective leadership and organizational capabilities
- Energetic self-motivated outgoing and a collaborative team player
- In-depth knowledge of current food and beverage trends
- Genuine passion for hospitality and delivering memorable guest experiences
