You will be updated with latest job alerts via emailKendrick Recruitment is currently seeking a skilled and experienced Senior Sous Chef to join a luxury lodge based in beautiful Zanzibar. This is an exciting opportunity for a culinary professional who thrives in a high-end remote environment and is passionate about delivering exceptional food experiences.
Key Outputs:
Maintain high standards of professionalism and discipline within the kitchen team
Provide inspirational leadership and manage the team to ensure productivity and service excellence
Ensure adherence to financial controls and record-keeping systems
Work closely with the Executive Chef to uphold lodge food quality standards
Assist in monitoring and achieving food cost budgets and guest satisfaction scores
Attend daily HOD meetings in the absence of the Executive Chef covering key operational topics such as guest movements maintenance food planning and guest requests
Uphold health and safety compliance including HACCP and Covid-19 protocols
Manage uniform stock and ensure correct dress code among team members
Monitor stock levels and oversee monthly stock takes
Supervise daily kitchen and staff canteen operations
Implement and manage kitchen cleaning rosters in line with local regulations
Maintain records for staff leave sick days and rosters in the absence of the Executive Chef
Attend all required meetings and communicate key updates with the team
Ensure effective coordination with Lodge Managers Guest Relations and Butlers
Qualifications and Experience Required:
Formal culinary qualifications
Minimum 2 years experience in a Sous Chef position ideally within a 5-star environment
Proven ability to work under pressure with excellent attention to detail
Guest-focused approach with a strong team ethic and eagerness to learn
Key Skills Required:
Genuine passion for food and creating memorable culinary experiences
Strong leadership and team management skills
Ability to motivate and inspire staff to consistently deliver high standards
Creativity and initiative within a collaborative team environment
Sound knowledge of hospitality operations including butler service housekeeping and laundry
Competent computer literacy
Personal Characteristics:
