SUMMARY OF POSITION
Whats the Gig you ask
This is an exciting opportunity to be part of our new Soho venue and play a key role in the operation and infrastructure. As Bar Manager youll collaborate with the Assistant General Manager to orchestrate seamless planning recruitment and execution for this fresh Clays location.
This role will be accountable for the operational success and the daytoday delivery providing amazing beverage experiences for our guests. You will be required to ensure the bar is set up for success and maintain a strong connection to our companys values and its F&B strategy.
In this role you will oversee a bar team and work closely with the Head of Beverage and our Operations Director (son of the Maestro Salvatore Calabrese) Jon Calabrese to drive colleague development to ensure the company achieves its succession planning goals through the Clayers Academy.
We are looking for a selfdriven highly experienced Bar Manager candidate who has worked in premium high volume operational businesses. Due to the nature of our wet business we require a candidate with lots of cocktail experience. You will be a dynamic thinker and passionate about people both guests and colleagues.
The right candidate will have a proven track record of delivering the highest Food and Beverage standards and has incredible attention to detail. You will also need to be a strong communicator with the confidence and energy to engage a team to deliver.
Previous experience of working in a fastpaced highvolume food and beverage environment is necessary and experience in another competitive socialising concept desirable.
DUTIES & RESPONSIBILITIES
Your role will include but may not be limited to the following responsibilities;
Operational Management:
- Oversee daily bar operations to ensure smooth and efficient service
- Implement Clays standard operating procedures for bar colleagues
- Ensure compliance with health safety and hygiene regulations
- Maintain bar equipment and utensils ensuring they are in good working order
- Plan and execute the menu in accordance with Clays F&B Strategy
- Coordinate with suppliers to ensure timely delivery of quality ingredients. In line with Clays F&B Strategy
Our Clayers:
- Recruit train and mentor bar colleagues fostering a positive work environment
- Ensure Clays performance reviews (IMPACT Chats) are being managed effectively by our policy
- Schedule and manage bar colleague shifts to ensure adequate coverage
- Promote Clays Behaviours and effective communication within the bar and with frontofhouse colleagues
- Support colleague development through ongoing training via Clayers Academy
- Ensure colleague compliance with company policies and procedures
Guest Experience:
- Ensure that all drinks are prepared and presented to the highest standard
- Monitor guest feedback and make adjustments in service as needed
- Interact with Clayer colleagues to gain feedback and ensure guest satisfaction
- Address and resolve any guest complaints or issues promptly and effectively
- Maintain a focus on providing exceptional beverage experiences for all guests
Financial Management:
- Develop and manage the bar budget including labour and beverage costs
- Monitor and control beverage inventory minimising waste and managing stock levels
- Analyse financial reports to identify areas for cost savings and efficiency improvements
- Negotiate with suppliers to secure the best prices for quality ingredients
- Ensure adherence to budgetary constraints and financial targets
- Implement cost control measures without compromising on quality
Marketing and Promotion:
- Collaborate with the marketing team to develop and promote special menus and events
- Assist in content creation for promotional materials including social media
- Participate in marketing initiatives to increase the visibility and reputation of Clays
- Accountable for the execution of Clays 3 key seasons Sunshine Months Moonlight Months and Festive Period
- Act as a brand ambassador maintaining the Clays beverage reputation
Administrative Duties:
- Maintain accurate records of bar operations including inventory logs and financial reports
- Ensure compliance with all legal and regulatory requirements
- Prepare and submit required reports promptly
- Manage bar documentation including recipes training materials and safety procedures
- Oversee beverage safety and hygiene audits
- Execute bar policies and procedures
- Determine local suppliers in line with our F&B Strategy
SKILLS DESIRED QUALIFICATIONS & ATTRIBUTES
- 3 years of experience in a similar position is desirable
- Mental Health First Aid (not essential)
- WSET Level 2 (not essential)
- Fire Warden (not essential)
