Kendrick Recruitment is currently seeking a talented and experienced Sushi Chef to join a prestigious luxury wine estate based in Stellenbosch. This role is perfect for a culinary professional who is passionate about Japanese cuisine and delivering exceptional quality in a refined setting.
Key Responsibilities:
Create and prepare a diverse sushi menu using a variety of fresh ingredients and raw fish (e.g. salmon tuna unagi)
Prepare appetisers soups and salads in line with the philosophy of Japanese cuisine
Lead and manage kitchen staff in the absence of the Head Chef
Work closely with service staff to ensure accurate preparation including accommodating special requests and dietary requirements
Guide and train junior kitchen staff in food preparation line cooking and plating techniques
Supervise food preparation and presentation to uphold quality and brand standards
Oversee and manage kitchen stock ensuring proper rotation quality control and efficient usage
Support initiatives to reduce waste and manage kitchen budget effectively
Collaborate with the Head Chef to maintain kitchen organisation and identify training opportunities
Monitor and maintain hygiene health and safety standards at all times
Requirements:
Matric; relevant culinary diploma preferred
Approximately 4 years experience in a senior chef role
Proven experience as a Sushi Chef or within an Asian cuisine kitchen
Strong knowledge of sushi varieties and professional rolling techniques
Reliable transport and a valid driver s licence
Ability to work quickly and accurately under pressure
Strong leadership and team management abilities
Solid computer literacy (Word Excel Outlook)
Excellent communication skills both verbal and written
High levels of customer service professionalism and organisation
Exceptional attention to detail
Flexibility to work evenings weekends and public holidays as required
Creative and resourceful with strong problemsolving skills
