Job Description

The La Jolla Beach & Tennis Club is currently seeking a highly skilled Lead Kitchen Steward Supervisor to join our team at our beautiful oceanfront property!

Pay Range: $24.00 $26.00 Hourly


SUMMARY

Oversees kitchen stewards and assists to ensure that work areas and restaurant equipment are cleaned and maintained according to standards. Promotes and follows LJBTC Inc.s Signature Service standards and requirements ensuring a lasting impression of exemplary service resulting in supremely satisfied and loyal members and guests


ESSENTIAL DUTIES AND RESPONSIBILITIES:


  • Maintains a high level of communication with Executive Chef Chef de Cuisine Sous Chef(s) Dining Room Manager(s) Kitchen Staff and Wait Staff.

  • Is able to exceed the requirements of the kitchen steward.

  • Trains stewards in all duties and responsibilities.

  • Instructs stewarding staff in organizational methods and techniques.

  • Assures cleanliness of overall kitchen including pots pans trays floor mats walls ceiling air vents worktables equipment refrigerators and meat blocks.

  • Sweeps mops and sanitizes kitchen floors.

  • Provide sanitizer solution and buckets to every station in the kitchen.

  • Segregates and removes trash and garbage and places it in designated containers.

  • Steam cleans or hoses out garbage cans and maintains designated trash receptacle areas (purchasing lanai and Marine Room compactor).

  • Sorts silverware chemical dip and soiled flatware.

  • Polishes silver using burnishing machine tumbler.

  • Properly stores supplies food and equipment in designated areas.

  • Maintains properly stores and labels chemicals in designated area.

  • Washes and peels vegetables.

  • Attends regularly scheduled kitchen meetings.

  • Other duties may be assigned.

OUTCOME:

The proper performance of the kitchen steward position will enhance the overall dining experience and ensure compliance with sanitation regulations. High quality standards will result in overall guest satisfaction.


QUALIFICATION REQUIREMENTS

To perform this job successfully an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge skill and/or ability required. EDUCATION and/or EXPERIENCE

Less than high school education; or up to onemonth related experience or training; or equivalent combination of education and experience.


LANGUAGE SKILLS

Ability to read and comprehend simple instructions short correspondence and memos. Ability to write simple correspondence (i.e. messages for coworkers). Ability to understand basic English and communicate in English at an appropriate level.


MATHEMATICAL SKILLS

Ability to add subtract multiply and divide.


REASONING ABILITY

Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions. Ability to deal with problems involving and few concrete variables in standardized situations.


CERTIFICATES LICENSES REGISTRATIONS

Must be able to obtain and maintain current Food Handlers Card.


PHYSICAL DEMANDS

The employee must regularly lift and/or move up to 10 pounds frequently lift and/or move up to 25 pounds and occasionally lift and/or move up to 50 pounds. Specific vision abilities required by this job include close vision color vision peripheral vision depth perception and the ability to adjust focus.

While performing the duties of this job the employee is regularly exposed to wet and/or humid conditions. The employee frequently works near moving mechanical parts. The employee is occasionally exposed to fumes or airborne particles toxic or caustic chemicals extreme heat or cold risk of electrical shock and vibration.


The noise level in the work environment is usually moderate to loud.


Employees are required to perform all tasks as safely as possible and to adhere to the applicable safety procedures.

INTERACTION:

Employees in this position interact with all kitchen coworkers and dining room staff on a daily basis. Occasionally interacts with maintenance front desk and other designated internal customers. On occasion employees also may interact with visitors guests vendors or other external customers.


SCHEDULING:

This company operates seven days a week 24 hours a day. Shifts will generally be rotated as much as possible to be fair to everyone. At times it may be necessary to move you from your accustomed shift if business or task assignments demand (i.e. holidays weekends and highvolume business periods). In addition it should be understood that business needs determine the number of hours that you work.
