Grade and Salary: Gradeper annum
FTE and working pattern: 1FTE 35hrs per week 5 from 7 days as required
Holiday Entitlement: 28 days annual leaveplus 9 buildings closed days (and Christmas Eve when it falls on a weekday)
Purpose of Role
To assist and support the in the planning preparation operation and service delivery of the corporate and conference catering on and off campus.
To support and assist the kitchen team with the planning preparation and service of the retail catering operations on the Edinburgh Campus
To support when necessary to ensure the smooth operation of the kitchen the delivery of all catering provision and the operation of the stores in keeping with the standards set and delivered by the Head Chef.
Key Duties & Responsibilities
Management Responsibilities
- Direct and manage the service delivery of the team working in conjunction with the Head Chef and Sous Chefs to develop General Assistants and Kitchen Porters.
- Place orders using relevant systems for Food and Beverage items used in daytoday operations.
- Initiate job cards for Estates maintenance and external equipment maintenance provider
- Monitor motivate develop the team members
Decision Making
- Delegate and monitor workload and objectives for team members balancing demands from the various work steams
- Provide technical advice and support to others to enable optimal service delivery
- Advise on future physical resource requirements within area e.g. general/specific equipment apparatus space etc.
Planning and Organising
- Plan and organise the work or resources of self and team in conjunction with the Head Chef & Sous Chefs to ensure the timely delivery of agreed service objectives in line with customer needs
- Working with the Head Chef & Sous Chefs to maintain standards to ensure work is carried out and performed to the required standard.
- Working with the Head Chef & Sous Chefs to plan and prepare for special events corporate commercial fine dining summers schools etc.

- Provide advice and guidance on relevant queries using personal knowledge and experience
- Provide advice and guidance to team members who raise or refer queries
- Use initiative and creative ideas to resolve nonstandard problems using experience to deliver effective conclusions
- Maintain awareness of changing market dynamics legislative amendments and trends to support growth the use of original ideas and innovative solutions
- Working with colleagues react and respond to last minute challenges in a proactive manner consistent with the business objectives and excellent service delivery

Essential & Desirable Criteria
Essential
- City and Guilds 706/1 and 706/2 or Equivalent
- Experience of a similar scale and diversity to role offered
- Experience of individual and team management or a diverse work force
- Ability to coach motivate assess and manage team members
- Good interpersonal influencing and presentation skills able to understand and communicate issues effectively
- Demonstrable excellent customer service and attention to detail
- Good IT skills in a business environment (specifically MS Office)
- High level organisational skills with the ability to prioritise workloads and to deliver effectively in a pressured environment
- Experience in implementing controls
- Valid Intermediate Food Hygiene Qualification
Desirable
- A Full Valid UK driving license
- Advanced Food Hygiene certificate / Diploma
- Awareness and use of remote monitoring systems e.g. Monika
- Experience of Live cooking
- Experience of working in Higher Education
- Good presentation and creative skills
- Good communications skills written and oral
- HACCP Qualification
- Knowledge and evidence of menu planning and food costing.
Special Factors
- Requirement to work at weekends and / or out of hours depending on the time of year this could be a regular occurrence
- Post Holder will be required to drive University vehicles in the course of their employment to carry out the specific post activities.
- Occasional requirement to travel to other campuses
