Marking the continued expansion of The Dels culinary experiences Nobu Del Coronado will be the newest addition to the worldrenowned Japanese restaurant empire founded by Nobu Matsuhisa and Robert De Niro.
Nobu Del Coronado will offer over 3700 square feet of stunning indoor and al fresco oceanfront dining space including an outdoor covered patio dining with a pagoda bar and dedicated sushi bar. Nobu Del Coronado will also spotlight Nobusignature dishes including the iconic Black Miso Cod and Yellowtail Jalapeo as well as Nobus worldrenowned sushi plus locally inspired dishes and cocktails.
As a Sushi Cook at Nobu Del Coronado you will be responsible for the preparation production and fabrication of all sushi bar items including sushi sashimi and cold dishes. You will play a crucial role in maintaining the high standards of Nobus sushi offerings by ensuring the quality precision and presentation of each dish. This position requires advanced knowledge of sushi preparation techniques attention to detail and the ability to work efficiently in a fastpaced environment.

Position Summary:
Sushi & Sashimi Preparation:
Prepare and serve highquality sushi and sashimi ensuring precise slicing presentation and the highest standards of taste and freshness. This includes working with a variety of fish shellfish and other ingredients as required by the menu.
Cold Dishes Preparation:
Prepare cold dishes such as salads appetizers and garnishes ensuring all items are prepared to perfection and presented beautifully. Follow the standard recipes and presentation guidelines provided by the culinary team.
Station Setup & Maintenance:
Set up and maintain a clean organized sushi station before and during service ensuring all necessary tools ingredients and equipment are in place. Keep the station wellstocked clean and organized throughout the shift.
Quality Control & Presentation:
Ensure all sushi and sashimi are made with the utmost attention to detail and are presented according to Nobus standards. Monitor the quality and freshness of all ingredients ensuring that only the finest fish and produce are used.
Plating & Garnishing:
Plate sushi sashimi and cold dishes to an exceptional standard ensuring consistency and visual appeal with each dish.
Communication & Collaboration:
Work closely with the rest of the kitchen team including sushi chefs line cooks and frontofhouse staff to ensure smooth operations and efficient service. Maintain clear communication with team members and provide support as needed.
Food Storage & Handling:
Properly store and handle all raw ingredients and prepared sushi items in accordance with food safety guidelines. Follow proper storage methods to ensure freshness and prevent contamination.
Health & Safety Compliance:
Adhere to all food safety sanitation and health regulations. Maintain a clean and hygienic work environment at all times following proper food handling procedures.
Guest Experience:
Contribute to the overall guest dining experience by providing highquality delicious and beautifully presented sushi and cold dishes. Ensure timely delivery of orders with attention to detail and guest satisfaction.
Performance During Service:
Maintain focus and composure during busy service hours delivering consistently highquality food meeting customer expectations and adhering to timing standards.
