Job Description
Qualifications:
- Minimum 5 years experience as a chef in a highvolume restaurant creating high quality food products.
- Culinary degree preferred.
License Requirements:
- Must secure appropriate RI mandated gaming licenses.
- FoodSafe Certified.
Essential Job Functions:
- Schedule staff both kitchen and dishroom create daily specials menu.
- Calculation of inventory requirements.
- Oversee cleanliness of kitchen refrigeration dishroom and all other kitchen support areas.
- Communication with front of house staff.
- Ordering of all food and supplies needed as well as costs.
- Hiring firing and supervision of necessary personnel.
- Knowledge and compliance of all RI food codes and HACCP laws.
- Ensure wait staff and kitchen staff fully understand all items for sale each day while ensuring security of kitchen after hours.
- Ensure all items leaving kitchen are charged for or brought to the Food Service General Kitchen Managers attention.
- Responsible for kitchen and all support staff during all hours of operation.
Physical/Mental Requirements:
- Continuous walking talking bending and reaching during operating hours
- Frequently testing food to ensure it is up to standard.
- Ability to lift up to 25 lbs.
Working Conditions:
- Kitchen area and casino floor.
- Working in moderate to loud noise levels in kitchen areas as well as moving through the casino floor.
