Job Description

Responsible for the preparation and assembly hot and cold food items following the established policies and procedures in accordance with patients cafeterias and catering menus and needs. Ensures that all food items meet standards for quality quantity and portion control as set by the department. Maintains safety and sanitation standards within the unit.

PRINCIPAL DUTIES AND RESPONSIBILITIES:

  • Produces assigned menu items following standardized recipes.
  • Ensures acceptable food temperatures food quality and appearance.
  • Weighs and measures products/recipe ingredients utilizing approved standardized equipment.
  • Prepares cooks holds and stores food at acceptable temperatures and in approved containers or designated equipment.
  • Assesses final food products through appropriate tastetesting practices and evaluation.
  • Slices wraps dates labels and rotates and stores following proper procedures.
  • Dates labels refrigerates and rotates prepared products.
  • Follows specific dating system to identify preparation and discard dates.
  • Portion foods as indicated on recipes and based on patient diet restrictions and modifications.
  • Uses the following equipment: convection and microwave ovens fryolators ranges steamjacketed kettles steamers tilt skillet mixers blenders scales food chopper etc.
  • Operates and maintains equipment in a safe and sanitary manner. Informs a manager of any malfunctioning equipment.
  • Informs Manager /Supervisor of food and nonfood needs.
  • Completes required inventories of patient food bank (cookchill system).
  • Rotates food supplies on a daily basis.
  • Dates and identifies foods appropriately.
  • Informs Manager of outdated leftover or any discrepancies with the inventories and helps plan for reuse of leftovers.
  • Prioritizes daily job assignments to meet deadlines.
  • Follows food production assignments meeting established deadlines.
  • Adheres to established Safety procedures especially when working with industrial mixers meat slicer food processor buffalo chopper peelers knives grills microwaves stoves and other equipment to assure safety of self and others.
  • Works with staff in the unit during changes brought about by staffing issues food availability or equipment availability.
  • Follows the department dress code.
  • Attends in services and training as scheduled.
  • Completes cleaning assignments providing for safe and sanitary equipment.
  • Prepares unit for monthly pest control inspection.
  • Contributes to effective functioning and teamwork of the work area.

SKILLS/ ABILITIES/ COMPETENCIES REQUIRED:

Read and comprehend English. Ability to count and perform basic math skills. Ability to calculate weights and measurements. Requires manual dexterity and repetitive motions.

WORKING CONDITIONS:

Work is performed in a typical institutional kitchen. Required to go in and out of refrigerated areas lift 50# and push/pull 100# stand 8 hrs.
