Job Description

Job Summary:

We are seeking a highly skilled and passionate Head South Indian Chef specializing in Kundapura cuisine from Karnataka. The ideal candidate will have extensive experience in authentic South Indian coastal cooking expertise in traditional spices and cooking techniques and the ability to manage a highpaced kitchen environment.

Key Responsibilities:

  • Develop design and execute authentic Kundapurastyle South Indian dishes including signature seafood chicken and vegetarian delicacies.

  • Ensure the highest standards of taste quality and presentation in all dishes served.

  • Innovate and introduce new menu items while preserving traditional flavors.

  • Oversee kitchen operations including food preparation cooking and plating ensuring consistency in every dish.

  • Source and manage highquality fresh ingredients particularly focusing on coastal and regional produce.

  • Train and mentor kitchen staff ensuring adherence to standard recipes and hygiene practices.

  • Manage inventory control kitchen costs and maintain budgetary guidelines.

  • Ensure strict adherence to food safety and hygiene standards.

  • Collaborate with restaurant management to enhance customer experience and satisfaction.



Requirements

Key Requirements:

  • Proven experience as a Head Chef or Senior Chef specializing in Kundapura cuisine.

  • Indepth knowledge of South Indian coastal spices cooking techniques and traditional preparation methods.

  • Expertise in preparing dishes like Kundapura Chicken Ghee Roast Mangalorean Fish Curry Neer Dosa and Kori Rotti.

  • Strong leadership team management and organizational skills.

  • Ability to work in a fastpaced environment and maintain consistency in quality.

  • Excellent understanding of hygiene health and safety regulations.

  • Strong communication skills and ability to collaborate with management and service teams.

Preferred Qualifications:

  • Experience working in renowned South Indian or coastal cuisine restaurants.

  • Knowledge of modern plating techniques while retaining authentic flavors.
