Reporting to the Executive Chef the Stewarding Supervisor plays a vital role in ensuring the highest standards of cleanliness hygiene and operational excellence across all culinary and back-of-house areas. This role is essential in supporting Fairmonts mission to Make Special Happen for every guest by turning everyday moments into cherished memories through seamless service and attention to detail.
Key Responsibilities:
- Consistently deliver warm professional and proactive service supporting colleagues and contributing to a culture where every moment matters.
- Lead inspire and develop the Stewarding team to uphold Fairmonts standards of luxury safety and efficiency.
- Balance operational execution with administrative responsibilities and colleague engagement.
- Conduct regular departmental briefings to ensure alignment motivation and clear communication.
- Supervise the sanitation and maintenance of all kitchen equipment and stewarding areas ensuring a pristine environment that reflects our commitment to excellence.
- Review Banquet Event Orders (BEOs) and ensure stewarding setups are executed flawlessly to support memorable guest experiences.
- Monitor and report shortages in china silverware and equipment; requisition replacements in line with budget and sustainability goals.
- Collaborate closely with the Executive Chef and Banquet/Catering teams to anticipate needs and exceed expectations.
- Manage inventory and ordering of cleaning supplies ensuring cost-effective usage and proper chemical handling.
- Ensure all stewarding equipment is in optimal working condition and report maintenance needs promptly.
- Maintain a clean organized and safe work environment in compliance with HACCP and local health regulations.
- Support the implementation of Fairmonts culinary philosophy and reinforce brand values and cultural attributes in every task.
- Supervise the cleaning and restocking of all operating equipment for outlets and banquet functions.
- Coordinate with pantry storeroom and non-cooking kitchen staff to ensure seamless operations.
- Liaise with outlet teams to ensure timely and accurate delivery and placement of operating equipment.
- Monitor stewarding operations during peak periods providing hands-on support and adjustments as needed.
- Ensure dishwashing machines are used correctly and water temperature and chemical levels are documented.
- Assist with banquet setups plate-ups and buffets as required to support exceptional culinary moments.
- Prepare and post weekly stewarding schedules aligned with business volumes and performance indicators.
- Ensure cleaning schedules are strictly followed and documented maintaining the highest hygiene standards.
- Support exclusive-use events and themed functions contributing to the creation of unforgettable guest experiences.
- Uphold all departmental policies procedures and service standards.
- Perform other duties as assigned by the Executive Chef or leadership team always with a spirit of service and excellence.
Qualifications :
- Proven leadership experience in stewarding or kitchen operations preferably in a luxury hotel environment.
- Strong interpersonal organizational and problem-solving skills.
- Excellent verbal and written communication skills.
- Proficient in Microsoft Office applications.
- Degree or diploma in Hospitality Management or a related field is an asset.
- Highly responsible reliable and committed to excellence.
- Ability to work well under pressure in a fast-paced high-volume environment.
- Team-oriented with a proactive and flexible approach.
