We are seeking a talented and passionate Sous Chef to join our culinary team at Novotel Canberra. As the second-in-command in our kitchen you will play a crucial role in maintaining our high standards of food quality and kitchen operations. You will:
- Assist the Executive Chef in overseeing daily kitchen operations and staff management
- Develop and implement new menu items ensuring creativity and adherence to our culinary standards
- Train and mentor kitchen staff fostering a collaborative and efficient work environment
- Ensure compliance with food safety and hygiene regulations
- Manage inventory place orders and control food costs
- Step in for the Head Chef when necessary demonstrating strong leadership skills
- Collaborate with the front-of-house team to ensure seamless service and guest satisfaction
- Participate in menu planning food preparation and plating
- Maintain a clean and organised kitchen environment
Qualifications :
- Relevant culinary trade qualifications (e.g. Certificate in Commercial Cookery)
- Minimum 3-5 years of similar experience in a professional kitchen preferably in a 4-5 star hotel environment
- Advanced knowledge of culinary techniques food preparation and presentation
- Strong understanding of food safety and hygiene standards with current food safety supervisor certification
- Experience with inventory management systems and budgeting
- Excellent team leadership and communication skills
- Proficiency in menu planning recipe development and cost control
- Ability to work efficiently in a fast-paced environment
- Knowledge of various cuisines and current culinary trends
- Passion for food and commitment to culinary excellence
