Job Description

We are seeking a talented and passionate Sous Chef to join our culinary team at Novotel Canberra. As the second-in-command in our kitchen you will play a crucial role in maintaining our high standards of food quality and kitchen operations. You will:

  • Assist the Executive Chef in overseeing daily kitchen operations and staff management
  • Develop and implement new menu items ensuring creativity and adherence to our culinary standards
  • Train and mentor kitchen staff fostering a collaborative and efficient work environment
  • Ensure compliance with food safety and hygiene regulations
  • Manage inventory place orders and control food costs
  • Step in for the Head Chef when necessary demonstrating strong leadership skills
  • Collaborate with the front-of-house team to ensure seamless service and guest satisfaction
  • Participate in menu planning food preparation and plating
  • Maintain a clean and organised kitchen environment

Qualifications :

  • Relevant culinary trade qualifications (e.g. Certificate in Commercial Cookery)
  • Minimum 3-5 years of similar experience in a professional kitchen preferably in a 4-5 star hotel environment
  • Advanced knowledge of culinary techniques food preparation and presentation
  • Strong understanding of food safety and hygiene standards with current food safety supervisor certification
  • Experience with inventory management systems and budgeting
  • Excellent team leadership and communication skills
  • Proficiency in menu planning recipe development and cost control
  • Ability to work efficiently in a fast-paced environment
  • Knowledge of various cuisines and current culinary trends
  • Passion for food and commitment to culinary excellence
